The WS freezer is designed to assure efficient control of the process. A choice of manual, semi-automatic or fully-automatic models allows for selection of the level of control that fits the product demands.

All WS freezers are approved to apply the 3-A Sanitary Standards symbol, and comply with all amendments thereto. The WS series freezers comply with al lUS and European safety standards, and are CE-marked.

Consistent viscosity at any flow rate

Semi-automatic and fully-automatic WS series freezers feature the WCB proven Viscotrol. Viscotrol maintains constant ice cream viscosity, whether it is stiff and dry for extrusions or soft and flowable for mold filling. Viscotrol helps to maintain an accurate fill and better controls the extrusion applications.

Precise overrun control for repeatable profitability

Superior overrun control is a major advantage common to all WS series freezers. Variations are virtually eliminated through the use of a product discharge pump. This feature effectively isolates the freezer cylinder from high downstream pressures, often encountered in extrusion applications.

A flow meter system enables production of both low and high overruns through precise metering of air into the freezing cylinder.

Mix metering is accomplished through a unique variable ratio pump system or through the use of a mix flow meter, depending on the style of pumps used and/or the options selected.

The result is an accurate and repeatable control over a wide range of overrun settings, providing uniform freezing and consistent product delivery to the filler, extruder, or molder with precise control of mix and air metering.

Two dashers to suit your products

It is easy to customize any of the WS freezers to suit the application. WCB offers a choice of two dashers suitable to all varieties of frozen product formulations, viscosities, textures and overruns. Both feature rugged stainless steel constructions, with hardened stainless steel scraper blades.

  • Type 30 standard open dasher

Used for most frozen desserts. Displaces approximately 30% of cylinder volume. The blade-carrying frame, designed for heavy duty use, diverts the product directly to the reaction-driven beater for maximum intermixing and thorough air incorporation.

  • Type 80 standard closed dasher:

Optional dasher for special applications requiring stiff, dry appearing ice cream at a given temperature. Displaces approximately 80% of cylinder volume, resulting in rapid development of small and uniform ice crystals. Not all ice cream formulations are compatible with the type 80 dasher. Consult WCB Ice Cream’s specialists for these applications.

Pre-aerator equipment

An optional pre-aerator provides an even distribution of air cells, reducing variations in overrun, and improving filling accuracy. The pre-aerator mechanically shears the overrun air and mix prior to entering the freezing barrel. Also, pre-aeration has shown to improve product texture and consistency especially on low solids and/or low fat products. For molded stick ice cream applications, normal shrinkage can be reduced up to 50%.

Choose the level of control you need from three basic designs

  • Manual control:

The manual control design provides the most economical capital investment, while incorporating the same basis quality components as the other WS series freezer models.

  • Positive displacement rotary lobe pumps with rubber-covered rotors, and CIP by-pass covers.
  • All electric variable frequency pump drives.
  • TEFC dasher motor.
  • Panel-mounted switches for dasher, refrigeration, pumps, by- pass covers, and hot gas control.
  • Adjustable overrun control from 8% to 150%.
  • STALL motor for freeze-up prevention.
  • Semi-automatic control

Includes controls for providing the optimum semi-automatic processing package. Contains all the features of the models with manual control, plus the following:

  • Electronic controllers for overrun and viscosity.
  • Control and display of cylinder pressure*.
  • Option: WAUKESHA pumps with mix flow meter.
  • Air mass flow meter for overrun control from 8% to 150%.
  • Mix and Ice cream temperature display*.
  • Adjustable cylinder pressure*.
  • WS series freezer with measured value semi-automatic control

Ws series freezers with all of the features of the manual model, but without the *-marked features are available upon request, providing an optimum production freezer.

  • Fully-automatic control

Fully-automatic, user-friendly control design incorporates all WCB’s technology leadership. Contains features of the models with manual and semi-automatic controls, plus the following:

  • Color touch-screen for easier operator control and operation.
  • Simplified display requires less operator training.
  • Storage increased to 150 product settings.
  • On-screen function keys for automatic sequencing of startup, shut-down, CIP, sanitation, hold and defrost.
  • Scheduled preventive maintenance alerts.
  • Display of production data, bar graphs and mimic screen.
  • Both temperature and viscosity controls.
